Serves:

Ingredients

  • 2 cups of bulgur wheat
  • 4 cups of vegetable broth
  • 2 tablespoons of olive oil
  • 1 red onion, sliced
  • 2 bell peppers, sliced
  • 2 zucchinis, sliced
  • 2 teaspoons of cumin
  • 2 teaspoons of paprika
  • 1 teaspoon of turmeric
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a saucepan, bring the vegetable broth to a boil. Add the bulgur wheat, cover, and simmer for 10-15 minutes or until the liquid is absorbed. Fluff with a fork and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the red onion and sauté for 2 minutes.

  3. Add the bell peppers and zucchinis to the skillet. Cook for 5-7 minutes or until the vegetables are tender.

  4. Sprinkle the cumin, paprika, and turmeric over the vegetables. Stir to coat evenly.

  5. In a small bowl, whisk together the lemon juice, salt, and pepper. Pour the mixture over the cooked vegetables and toss to combine.

  6. Remove from heat and serve the spiced vegetables over a bed of cooked bulgur wheat.

  7. Garnish with fresh cilantro and enjoy!
