Ingredients

  • 1 pound red jalapeno peppers
  • 4 cloves garlic, minced
  • 1/2 cup distilled white vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon fish sauce
  • 1 teaspoon salt
  • 1 teaspoon paprika

Instructions

  1. Wash and dry the jalapeno peppers. Cut off the stems and roughly chop them.

  2. In a saucepan, combine the chopped peppers, minced garlic, white vinegar, brown sugar, fish sauce, salt, and paprika.

  3. Bring the mixture to a boil over medium heat, then reduce to a simmer and cook for 30 minutes, stirring occasionally.

  4. Remove from heat and let the sauce cool slightly.

  5. Transfer the sauce to a blender or food processor and blend until smooth.

  6. Strain the sauce through a fine mesh sieve to remove any solids.

  7. Store the sriracha sauce in an airtight container in the refrigerator for up to 2 weeks.
