Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tbsp mango chutney
  • 1 tbsp curry powder
  • 1 tbsp lemon juice
  • 1/4 cup sliced almonds
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large bowl, mix together the mayonnaise, Greek yogurt, mango chutney, curry powder, and lemon juice.

  2. Add the cooked chicken to the bowl and stir until well coated with the sauce.

  3. Season with salt and pepper to taste.

  4. Sprinkle sliced almonds over the chicken mixture and garnish with fresh cilantro.

  5. Refrigerate for at least 1 hour to allow the flavors to meld.

  6. Serve coronation chicken on a bed of lettuce or as a sandwich filling.
