Ingredients

  • 2 cups pinto beans, soaked overnight
  • 4 slices bacon, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 2 tomatoes, diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups chicken broth
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Rinse the soaked pinto beans and set aside.

  2. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon grease in the pot.

  3. Add the diced onion, minced garlic, and jalapeno to the pot. Cook until the onion is translucent.

  4. Add the diced tomatoes, cumin, paprika, salt, and black pepper. Cook for another 2 minutes.

  5. Add the soaked pinto beans and chicken broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 1 hour, or until the beans are tender.

  6. Stir in the cooked bacon and fresh cilantro. Simmer for another 5 minutes.

  7. Serve the Frijoles a la Charra hot, garnished with additional cilantro if desired.
