Ingredients

  • 1 can (15 oz) of black beans, drained and rinsed
  • 1 can (15 oz) of refried beans
  • 1 cup of shredded Mexican cheese blend
  • 1/2 cup of salsa
  • 1/4 cup of pickled jalapenos, chopped
  • 1/4 cup of chopped fresh cilantro
  • 1/2 tsp of cumin
  • 1/2 tsp of chili powder
  • 1/4 tsp of garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a mixing bowl, combine the black beans, refried beans, salsa, jalapenos, cilantro, cumin, chili powder, garlic powder, salt, and pepper. Mix well.

  3. Spread the bean mixture evenly in a 9×9 inch baking dish.

  4. Sprinkle the shredded cheese on top of the bean mixture.

  5. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

  6. Remove from the oven and let cool for a few minutes before serving.

  7. Garnish with additional chopped cilantro, salsa, and jalapenos if desired.

  8. Serve hot with tortilla chips or vegetable sticks.
