Ingredients

  • 2 cups of black-eyed beans, soaked overnight and cooked
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tomatoes, diced
  • 2 tbsp of vegetable oil
  • 1 tbsp of chili powder
  • 1 tsp of cumin powder
  • 1 tsp of oregano
  • Salt and pepper to taste
  • 1 cup of vegetable broth
  • 1/4 cup of unsweetened cocoa powder
  • 2 tbsp of honey
  • Juice of 1 lime
  • For the salsa:
  • 1 avocado, diced
  • 1 tomato, diced
  • 1/4 cup of red onion, finely chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until tender.

  2. Add the diced tomatoes, chili powder, cumin powder, oregano, salt, and pepper. Cook for another 5 minutes until the tomatoes are soft.

  3. Add the cooked black-eyed beans and vegetable broth to the pot. Stir in the cocoa powder and honey. Bring to a simmer and let it cook for 30-40 minutes, until the sauce thickens.

  4. Meanwhile, prepare the salsa by combining diced avocado, tomato, red onion, lime juice, salt, and pepper in a bowl. Mix well and set aside.

  5. Once the mole sauce has thickened, remove from heat and stir in the lime juice.

  6. Serve the black-eyed bean mole with the salsa on top. Garnish with fresh cilantro.
