Ingredients

  • 1 cup dried black-eyed peas
  • 4 slices bacon, chopped
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper
  • 2 cups cooked rice

Instructions

  1. Rinse the black-eyed peas and soak them in water overnight. Drain.

  2. In a large pot, cook the bacon until crispy. Remove the bacon, leaving the drippings in the pot.

  3. Add the onion, bell pepper, and garlic to the pot and cook until softened.

  4. Add the drained black-eyed peas, chicken broth, salt, black pepper, thyme, and cayenne pepper to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.

  5. Stir in the cooked rice and crispy bacon. Cook for an additional 10 minutes.

  6. Serve hot and enjoy!
