Ingredients

  • 3 ancho chilies
  • 2 pasilla chilies
  • 2 mulato chilies
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1/4 cup almonds
  • 1/4 cup pumpkin seeds
  • 1/4 cup sesame seeds
  • 2 tomatoes, roasted
  • 1/4 cup raisins
  • 1/4 cup peanut butter
  • 2 tortillas
  • 2 slices of bread
  • 1 cinnamon stick
  • 2 cloves
  • 1/2 tsp cumin seeds
  • 1/2 tsp coriander seeds
  • 1/4 tsp black peppercorns
  • 2 tbsp vegetable oil
  • 2 cups chicken broth
  • 1 oz dark chocolate, chopped
  • Salt, to taste

Instructions

  1. Heat a dry skillet over medium heat. Toast the chilies for 1-2 minutes until fragrant. Remove the stems and seeds, then soak them in hot water for 15 minutes.

  2. In the same skillet, toast the almonds, pumpkin seeds, and sesame seeds until golden brown. Remove and set aside.

  3. In a blender, combine the soaked chilies, onions, garlic, toasted nuts and seeds, roasted tomatoes, raisins, peanut butter, tortillas, bread, cinnamon stick, cloves, cumin seeds, coriander seeds, and black peppercorns. Blend until smooth.

  4. Heat the vegetable oil in a large pot over medium heat. Add the sauce from the blender and cook for 5 minutes, stirring constantly.

  5. Slowly pour in the chicken broth and bring the sauce to a simmer. Cook for 1 hour, stirring occasionally.

  6. Stir in the chopped chocolate and continue cooking for another 30 minutes until the sauce thickens. Season with salt to taste.

  7. Serve the authentic mole sauce over your favorite Mexican dishes like chicken or enchiladas.
