Ingredients

  • 4 tortillas
  • 1 tablespoon sesame oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 carrot, julienned
  • 1 cup snap peas
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 2 tablespoons sesame seeds

Instructions

  1. Heat sesame oil in a large skillet or wok over medium heat.

  2. Add the bell peppers, zucchini, carrot, and snap peas to the skillet.

  3. Stir-fry the vegetables for 5-7 minutes, until they are tender-crisp.

  4. In a small bowl, whisk together soy sauce, rice vinegar, and honey.

  5. Pour the sauce over the vegetables and stir-fry for an additional 2 minutes.

  6. Heat the tortillas in a dry skillet or microwave until warm.

  7. Spoon the stir-fried vegetables onto the tortillas and sprinkle with sesame seeds.

  8. Roll up the tortillas tightly, tucking in the sides as you go.

  9. Cut the wraps in half and serve.
