Ingredients

  • 1 (15 oz) can black-eyed peas, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red onion
  • 1 jalapeno, seeded and diced
  • 1/3 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons lime juice
  • 1 tablespoon sugar
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the black-eyed peas, black beans, corn, bell peppers, red onion, jalapeno, and cilantro.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, sugar, cumin, salt, and pepper.

  3. Pour the dressing over the bean mixture and toss to coat.

  4. Serve immediately or refrigerate for 1-2 hours to allow the flavors to meld together.

  5. Serve with tortilla chips or as a topping for grilled meats.
