How To Make Acaraje (Black-eyed Pea Fritters with Shrimp Filling)

Ingredients
- 2 cups black-eyed peas, soaked overnight
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tbsp of ground dried shrimp
- 1 tsp of salt
- 1 tsp of ground black pepper
- 1 tsp of ground cumin
- Vegetable oil, for frying
- 1 cup of cooked shrimp, chopped
- 1 tomato, diced
- 1/4 cup of cilantro, chopped
- 1/4 cup of red onion, finely chopped
- 1 lime, cut into wedges
Instructions

Drain and rinse the soaked black-eyed peas. Place them in a food processor and blend until smooth.

In a bowl, combine the pureed black-eyed peas, chopped onion, minced garlic, dried shrimp, salt, pepper, and cumin. Mix well.

Heat vegetable oil in a deep frying pan over medium heat.

Take a spoonful of the black-eyed pea mixture and shape it into a small patty. Carefully drop it into the hot oil.

Fry the fritters for about 3-4 minutes on each side until golden brown. Remove from the oil and drain on paper towels.

In a separate bowl, mix together the cooked chopped shrimp, diced tomato, chopped cilantro, and finely chopped red onion.

Slice the Acaraje fritters in half and fill them with the shrimp mixture.

Serve the Acaraje fritters with lime wedges on the side.
