Ingredients

  • 1 lb raw shrimp, peeled and deveined
  • 1 lb Andouille sausage, sliced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp cajun seasoning
  • 1/4 cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add sliced sausage and sauté until browned, about 5 minutes.

  3. Add chopped bell peppers, onion, and garlic. Continue cooking until vegetables are soft, about 5 minutes.

  4. Add shrimp and cajun seasoning. Cook until shrimp turn pink, about 2-3 minutes.

  5. Pour in chicken broth and stir, cooking until broth is slightly reduced and coats the shrimp and sausage.

  6. Season with salt and pepper, to taste. Top with fresh parsley (optional) before serving.
