Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 lb Andouille sausage, sliced
  • 1 lb boneless skinless chicken breast, cut into small pieces
  • 1 lb shrimp, peeled and deveined
  • 1 can (14 oz) diced tomatoes
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add onions, bell peppers, and garlic. Cook until vegetables are tender.

  3. Add sliced sausage and chicken, sauté for another 5 minutes.

  4. Stir in diced tomatoes, rice, chicken broth, Cajun seasoning, salt, and pepper.

  5. Bring to a boil, reduce heat, and simmer for 20 minutes.

  6. Stir in shrimp and cook for an additional 5-7 minutes until cooked through.

  7. Let the Jambalaya rest for a few minutes before serving.
