How To Make Instant Pot Shrimp and Pasta Salad Recipe
A refreshing summer salad packed with protein and flavor from succulent shrimps and healthy pasta.

Ingredients
- 1 lb. uncooked shrimp, peeled and deveined
- 8 oz. penne pasta, cooked according to package directions
- 2 cups frozen peas
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup minced fresh dill
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 tsp. dijon mustard
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Instructions

Set Instant Pot to sauté mode and add in the shrimp. Cook until they turn pink, approximately 2-3 minutes.

Once done, transfer the shrimp to a large mixing bowl.

In the same Instant Pot, add frozen peas and cook for 1-2 minutes.

Next, add in the diced red bell pepper and onion. Sauté for another 2-3 minutes until the vegetables have softened.

Transfer the vegetables to the mixing bowl.

Add in the cooked pasta, fresh parsley, and dill.

In a small bowl, whisk together olive oil, red wine vinegar, dijon mustard, salt, and black pepper.

Drizzle the dressing over the pasta salad and toss until everything is well coated.

Serve chilled.
