How To Make Instant Pot Shrimp Fried Rice Recipe

Quick and easy fried rice loaded with succulent shrimp and veggies, cooked in Instant Pot.

Serves:

Ingredients

  • 2 cups of cooked jasmine rice
  • 1/2 pound of large shrimp, peeled and deveined
  • 1/2 cup of frozen peas and carrots
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of soy sauce
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, grated
  • 2 large eggs, beaten
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Turn the Instant Pot to sauté mode and heat the oil.

  2. Add shrimp, garlic, and ginger; cook until shrimp is pink and cooked.

  3. Add the rice and veggies, and stir to combine.

  4. Push the rice mixture to the side of the pot and add the eggs.

  5. Scramble the eggs until cooked, then mix them with the rice mixture.

  6. Add soy sauce, green onions, salt, and pepper.

  7. Close the Instant Pot and cook on high pressure for 3 minutes.

  8. After 3 minutes, do a quick release of the pressure and open the lid.

  9. Serve hot.
