How To Make Instant Pot Shrimp Stir-Fry Recipe

A quick and easy seafood dish with juicy shrimp, colorful veggies and Asian-inspired flavors.

Ingredients

  • 1 lb. of large shrimp, peeled and deveined
  • 2 tbsp. of vegetable or canola oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large carrot, peeled and sliced
  • 1 small onion, sliced
  • 1 tbsp. of minced garlic
  • 1 tbsp. of soy sauce
  • 1 tbsp. of oyster sauce
  • 1 tbsp. of cornstarch
  • 2 tbsp. of water
  • salt and pepper to taste

Instructions

  1. Press the ‘Saute’ button on your Instant Pot and heat the oil.

  2. Add the shrimp and saute for 2-3 minutes or until slightly pink in color.

  3. Add the bell peppers, carrot, onion, and garlic and continue sauteing for another 2-3 minutes or until the veggies are slightly tender.

  4. In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, water, salt, and pepper.

  5. Pour the sauce mixture over the shrimp and veggies and give everything a gentle stir.

  6. Close the lid of the Instant Pot, set the pressure release valve to ‘Sealing’, and press the ‘Manual’ button. Cook on high pressure for 1 minute.

  7. Once the cooking cycle is complete, allow the pressure to release naturally for 5 minutes, then carefully quick-release the remaining pressure.

  8. Serve shrimp stir-fry hot, garnished with chopped scallions or sesame seeds.
