  • 2 large sweet potatoes, peeled and diced into 1-inch pieces
  • 1/4 cup unsalted butter, melted
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 large egg, beaten
  • 1 cup mini marshmallows

Instructions

  1. Preheat oven to 375°F.

  2. Boil sweet potatoes in a pot of water for about 10 minutes.

  3. Drain and place in a large bowl.

  4. Add melted butter, brown sugar, cinnamon, nutmeg, and salt. Mash until smooth.

  5. Stir in milk and beaten egg.

  6. Transfer mixture to an oven-safe dish and top with mini marshmallows.

  7. Bake for 30-35 minutes or until marshmallows are golden brown.
