Ingredients

  • 2 large sweet potatoes, peeled and chopped
  • 1/4 cup honey
  • 1/4 cup coconut oil
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup pecans, chopped
  • 1/2 cup maple syrup
  • 1/4 cup coconut flour

Instructions

  1. Preheat oven to 375°F.
  2. Boil sweet potatoes for 15-20 minutes until tender.
  3. Drain sweet potatoes and mash with honey, coconut oil, cinnamon, nutmeg, and salt.
  4. Spread sweet potato mixture into a casserole dish.
  5. In a separate bowl, mix together pecans, maple syrup, and coconut flour.
  6. Sprinkle pecan mixture on top of sweet potato mixture.
  7. Bake for 30-40 minutes, until pecans are toasted and casserole is heated through.
