Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup brown sugar
  • 1/4 cup melted butter
  • 1/4 cup milk
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Place the sweet potatoes in a pot of boiling water and cook until tender, about 15 minutes. Drain and set aside.

  3. In a mixing bowl, combine the cooked sweet potatoes, brown sugar, melted butter, milk, cinnamon, nutmeg, and salt. Mash until smooth.

  4. Transfer the sweet potato mixture to a greased casserole dish.

  5. Sprinkle the mini marshmallows evenly over the top.

  6. Bake in the preheated oven for 30 minutes or until the marshmallows are golden brown and the casserole is heated through.

  7. Serve hot and enjoy!
