Ingredients

  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 red onion, sliced into wedges
  • 8-10 wooden or metal skewers
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. Soak wooden skewers in water for 20 minutes.

  2. Preheat grill to medium-high heat.

  3. Thread vegetables onto skewers, alternating colors.

  4. In a small bowl, combine olive oil, garlic powder, oregano, salt, and pepper. Brush mixture over skewered vegetables.

  5. Grill skewers for 10-15 minutes, turning occasionally, until vegetables are tender and slightly charred.
