  • 1 ear of corn, husked
  • 1 red bell pepper, seeded and diced
  • 1 medium tomato, diced
  • 1 small red onion, finely chopped
  • 1 jalapeno, seeded and finely chopped
  • 2 garlic cloves, minced
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Cut the kernels off the corn cob and place in a large bowl.

  2. Add the red bell pepper, tomato, red onion, jalapeno, and garlic. Mix well.

  3. Add the lime juice, cilantro, salt, and pepper. Stir to combine.

  4. Serve immediately or chill until ready to serve.
