How To Make Refreshing Cilantro Lime Soup

Ingredients
- 2 tbsp olive oil
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 1 jalapeno pepper, seeded and minced
- 6 cups chicken broth
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1/4 cup freshly squeezed lime juice
- 1/2 cup cilantro, chopped
- salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat. Add onion, garlic, and jalapeno and cook until softened.

Add chicken broth, black beans, and corn. Bring to a boil, then reduce heat and simmer for 10 minutes.

Stir in lime juice and cilantro. Season with salt and pepper to taste.

Use an immersion blender or transfer to a blender and puree until smooth.

Serve hot or cold topped with additional cilantro and lime wedges.
