How To Make Chilled Minty Courgette Soup

- 4 medium courgettes, roughly chopped
- 1 small onion, diced
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup fresh mint leaves
- 1/2 cup plain yogurt
- Juice of 1 lemon
- Salt and pepper, to taste

In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, and cook until translucent.

Add the chopped courgettes to the pot and cook for 5 minutes, stirring occasionally.

Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for another 5 minutes, or until the courgettes are tender.

Remove the pot from the heat and add the fresh mint leaves, stirring to combine. Allow the mixture to cool slightly.

Using a blender or an immersion blender, puree the soup until smooth.

Stir in the yogurt and lemon juice, and season with salt and pepper to taste.
