How To Make Balsamic Chicken and Veggie Pasta Salad

A flavorful and healthy pasta salad with grilled balsamic chicken and fresh veggies.

  • 8 oz pasta
  • 2 chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1/2 red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 4 oz feta cheese
  • Salt and pepper, to taste


  1. Cook pasta according to package directions. Drain and set aside.

  2. Preheat grill or grill pan to medium-high heat. Season chicken with salt and pepper.

  3. In a small bowl, whisk together balsamic vinegar and olive oil. Brush the chicken with the mixture and grill for 6-8 minutes per side or until cooked through.

  4. In a large bowl, combine cooked pasta, grilled chicken, chopped bell peppers, red onion, and cherry tomatoes. Season with salt and pepper.

  5. Crumble feta cheese on top.

  6. Serve at room temperature or chilled.
