Ingredients

  • 1 lb boneless, skinless chicken breast, cut into cubes
  • 1 red bell pepper, cut into cubes
  • 1 yellow onion, cut into cubes
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • Salt and pepper, to taste
  • Skewers

Instructions

  1. Preheat grill to medium-high heat.

  2. In a bowl, combine olive oil, lemon juice, garlic, paprika, cumin, coriander, salt, and pepper. Mix well.

  3. Add chicken, bell pepper, and onion to the bowl. Toss to coat well.

  4. Thread chicken, pepper, and onion onto skewers.

  5. Grill kebabs for 10-12 minutes, turning occasionally, until the chicken is cooked through.

  6. Serve hot and enjoy!
