  1. In a bowl, combine the olive oil, minced garlic, paprika, cumin, salt, black pepper, and cayenne pepper (if using).

  2. Add the chicken pieces to the marinade and toss to coat. Let it marinate for at least 10 minutes, or up to overnight in the refrigerator.

  3. Preheat your grill or preheat your oven to 425°F (220°C).

  4. Thread the marinated chicken, bell peppers, and onions onto the soaked wooden skewers, alternating between them.

  5. Grill the kebabs over medium-high heat for about 8-10 minutes, turning occasionally, until the chicken is cooked through and slightly charred.

  6. If baking in the oven, place the kebabs on a lined baking sheet and bake for 15-20 minutes, or until the chicken is cooked through.

  7. Serve the chicken kebabs hot with your favorite dipping sauce or alongside a fresh salad.
