Serves:

Ingredients

  • 1/2 cup maple syrup
  • 1 cup nuts of your choice (e.g. almonds, pecans, walnuts)
  • 4 cups shredded cabbage
  • 2 cups shredded carrots
  • 1/2 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1/4 cup sliced green onions
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a small saucepan, heat the maple syrup over medium heat until it starts to slightly thicken, about 5 minutes. Stir occasionally.

  2. Add the nuts to the saucepan and stir to coat them evenly. Cook for an additional 2-3 minutes until the nuts are slightly caramelized. Remove from heat and let cool.

  3. In a large bowl, combine the shredded cabbage, shredded carrots, dried cranberries, chopped parsley, and sliced green onions.

  4. In a small bowl, whisk together the apple cider vinegar, olive oil, salt, and pepper.

  5. Pour the dressing over the slaw mixture and toss to combine.

  6. Top the slaw with the maple candied nuts.

  7. Serve chilled and enjoy!
