How To Make Classic Samosa

Crispy pastry shells filled with spiced potatoes and peas.

Preparation: 30 minutes
Cooking: 30 minutes
Total: 60 minutes

Serves:

Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 4 tbsp vegetable oil
  • 1/2 cup water
  • 2 large potatoes, peeled and finely chopped
  • 1 cup frozen peas
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tsp garam masala
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, combine flour and salt. Add in 4 tbsp of vegetable oil and mix well. Gradually add water, kneading until the dough is smooth and pliable. Cover the dough and let it rest for 30 minutes.

  2. In a pan, fry onions, garlic, and ginger in 2 tbsp of vegetable oil until the onions become translucent.

  3. Add in the potatoes, peas, garam masala, ground coriander, ground cumin, salt, and pepper. Fry until the potatoes are cooked through.

  4. Preheat oil in a frying pan.

  5. Divide the dough into 8 evenly shaped balls. Roll each ball out to form a circle. Cut each circle in half to form two semi-circles.

  6. Take one of the semi-circles and form a cone. Fill the cone with the potato mixture and seal the edges.

  7. Fry the samosas in the heated oil until they are golden brown and fully cooked.

  8. Serve hot with cilantro chutney or tamarind sauce.
