Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 4 burrito-sized tortillas
  • 1 cup shredded cheddar cheese
  • 1 avocado, sliced
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 2 tbsp olive oil

Instructions

  1. In a mixing bowl, whisk together eggs, milk, salt, and pepper.

  2. Heat olive oil in a large skillet over medium-high heat. Pour in egg mixture and cook until scrambled and set, about 5-7 minutes.

  3. Warm tortillas in the microwave for 15-20 seconds.

  4. Divide scrambled eggs onto each tortilla. Top with shredded cheese, avocado, salsa, and sour cream.

  5. Roll burritos tightly, folding in sides to keep ingredients inside.

  6. Serve and enjoy!
