Serves:
Ingredients
- 8 ounces chorizo, casings removed
- 8 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup chopped fresh cilantro
- Salsa, for serving
Instructions
-
In a large skillet, cook the chorizo over medium heat until browned and cooked through, breaking it up into crumbles. Remove chorizo from the skillet and set aside.
-
In a bowl, whisk together the eggs, milk, salt, and black pepper.
-
In the same skillet, pour the egg mixture and cook over medium heat, stirring occasionally, until the eggs are scrambled and cooked to your desired doneness. Remove from heat.
-
Warm the flour tortillas in a separate skillet or microwave.
-
To assemble the burritos, spoon a portion of the cooked chorizo onto each tortilla. Top with a portion of the scrambled eggs, shredded cheddar cheese, and chopped cilantro. Roll up the burrito, folding in the sides as you go.
-
Serve the chorizo breakfast burritos with salsa on the side.
