How To Make Ultimate Tofu Breakfast Burrito Bowls
Breakfast bowls are really convenient because all you have to do is literally toss together the ingredients in a bowl, and you’ve got yourself a hearty breakfast. You might have already seen the trendy bowls of quinoa seeds with fruits and nuts around social media. But did you know that you can have savory renditions of this morning meal, too? There are also vegetable and burrito bowls, after all. You’ll find them all in this collection of breakfast bowl recipes!

Ingredients
- 1 block of firm tofu, drained and crumbled
- 1 tbsp olive oil
- 1 bell pepper, diced
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- Salt and pepper to taste
- 4 cups cooked quinoa
- 1 cup black beans, rinsed and drained
- 1 avocado, sliced
- 1/4 cup cilantro, chopped
- Optional toppings: salsa, hot sauce, shredded cheese
Instructions

Heat olive oil in a large skillet over medium heat. Add the bell pepper, onion, and garlic. Cook until vegetables are softened, about 5 minutes.

Add the crumbled tofu to the skillet and sprinkle with cumin, paprika, chili powder, salt, and pepper. Cook for 5-7 minutes, until tofu is heated through and starting to brown.

In serving bowls, layer cooked quinoa, black beans, and tofu mixture.

Top with sliced avocado and chopped cilantro. Add any optional toppings desired.
