Ingredients

  • 4 sausages, sliced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 2 potatoes, cubed
  • 1 can (14 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the sausages and cook until browned.

  2. Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent.

  3. Add the diced carrots and cubed potatoes to the pot and cook for a few minutes.

  4. Pour in the diced tomatoes, chicken broth, and dried thyme. Season with salt and pepper to taste.

  5. Bring the stew to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the vegetables are tender.

  6. Serve the sausage stew hot and enjoy!
