Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 medium potatoes, cubed
  • 2 medium carrots, sliced
  • 1/2 head cabbage, chopped
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 Polish sausage, sliced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté for 3-5 minutes until onion is translucent.

  2. Add potatoes, carrots, and cabbage to the pot and sauté for another 5 minutes until vegetables have slightly softened.

  3. Pour in diced tomatoes and chicken broth and stir until combined.

  4. Add sliced Polish sausage to the pot and bring the soup to a boil.

  5. Reduce heat to medium-low and let the soup simmer for 30-40 minutes until vegetables are tender.

  6. Serve hot and enjoy!
