Ingredients

  • 1 lb baby potatoes, halved
  • 1/2 lb cooked Polish sausage, thinly sliced
  • 1/4 cup diced red onion
  • 2 tbsp chopped fresh parsley
  • 1/4 cup mayonnaise
  • 2 tbsp whole grain mustard
  • 1 tbsp dijon mustard
  • 1 tbsp white wine vinegar
  • Salt and pepper, to taste

Instructions

  1. Place potatoes in a large pot and cover with water. Bring to a boil over high heat and cook until tender, about 10-15 minutes.

  2. Drain potatoes and let cool slightly.

  3. In a large bowl, combine cooked potatoes, Polish sausage, red onion, and parsley.

  4. In a separate bowl, whisk together mayonnaise, whole grain mustard, dijon mustard, white wine vinegar, salt, and pepper.

  5. Pour dressing over the potato mixture and toss to coat.

  6. Serve chilled or at room temperature.
