Ingredients

  • 2 pounds pork shoulder, boneless
  • 1 onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Goan curry paste
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a slow cooker, add the sliced onions and minced garlic.

  2. In a small bowl, combine the Goan curry paste, brown sugar, apple cider vinegar, cumin, coriander, turmeric, paprika, salt, and black pepper. Mix well.

  3. Rub the spice mixture all over the pork shoulder, ensuring it is evenly coated.

  4. Place the seasoned pork shoulder on top of the onions and garlic in the slow cooker.

  5. Pour the chicken broth over the pork.

  6. Cover the slow cooker and cook on low for 8 hours or until the pork is tender and easily shreds.

  7. Once cooked, remove the pork from the slow cooker and shred it using two forks.

  8. Return the shredded pork to the slow cooker and mix it with the cooking liquid.

  9. Serve the Goan pulled pork on buns or with rice, garnished with chopped cilantro.
