How To Make Pork Rillettes

Ingredients

  • 1.5 lbs pork shoulder, cut into chunks
  • 2 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/4 cup white wine
  • 1 cup chicken broth
  • 4 tbsp rendered pork fat (reserved from cooking)
  • Baguette or crackers, for serving

Instructions

  1. Preheat your oven to 325°F (165°C).

  2. In a large oven-safe pot or Dutch oven, combine the pork shoulder, minced garlic, dried thyme, dried rosemary, black pepper, salt, white wine, and chicken broth.

  3. Cover the pot with a lid and place it in the preheated oven.

  4. Cook the pork for 4 hours, or until it is very tender and easily shreds when pulled with a fork.

  5. Remove the pot from the oven and let it cool slightly.

  6. Using two forks, shred the pork shoulder into small pieces.

  7. Transfer the shredded pork to a mixing bowl and add 4 tablespoons of the rendered pork fat. Mix well to combine.

  8. Taste the rillettes and adjust the seasoning if needed.

  9. Transfer the rillettes to a jar or serving dish and press it down to remove any air pockets.

  10. Refrigerate the rillettes for at least 2 hours, or until it is firm and spreadable.

  11. Serve the pork rillettes with slices of baguette or crackers.
