  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 cups packed fresh spinach
  • 2 cups packed fresh kale
  • 1 cup frozen peas
  • 1 cup fresh basil leaves
  • 1 cup fresh mint leaves
  • 1 cup plain yogurt
  • 1/4 cup pine nuts
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Sauté until the onion is translucent.

  2. Add vegetable broth to the pot and bring to a simmer.

  3. Add spinach, kale, peas, basil, and mint to the pot. Cook for about 10 minutes, or until the greens are wilted and peas are cooked through.

  4. Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth. Return the blended soup to the pot.

  5. Season the soup with salt and pepper to taste. Simmer for an additional 5 minutes.

  6. In a small skillet, toast the pine nuts over medium heat until golden brown.

  7. Ladle the soup into bowls and top each with a dollop of yogurt and a sprinkle of toasted pine nuts.

  8. Serve hot and enjoy!
