How To Make Egg Wraps with Black Beans & Rocket

Ingredients
- 8 eggs
- 1 tsp salt
- 2 tbsp olive oil
- 1 can black beans, drained and rinsed
- 2 cups rocket leaves
- 1/2 cup shredded cheese (optional)
- Salsa, for serving (optional)
Instructions

In a bowl, whisk together the eggs and salt.

Heat olive oil in a non-stick skillet over medium heat. Pour 1/4 of the egg mixture into the skillet and swirl to coat the bottom.

Cook the egg wrap for 2-3 minutes, until set. Flip and cook for another 1-2 minutes. Remove from the skillet and set aside. Repeat with the remaining egg mixture to make 4 wraps.

In the same skillet, heat the black beans until warmed through.

To assemble the wraps, place a handful of rocket leaves in the center of each wrap. Top with black beans and shredded cheese, if desired.

Roll up the wraps tightly and cut in half. Serve with salsa, if desired.
