Ingredients

  • 4 slices of baguette
  • 1 cup of frozen peas, thawed
  • 1 garlic clove, minced
  • 2 tbsp of olive oil
  • 1 cup of rocket leaves
  • 1 cup of cooked broad beans
  • Salt and pepper to taste
  • Parmesan cheese, grated (optional)

Instructions

  1. Preheat the grill or a grill pan.

  2. Drizzle the baguette slices with olive oil and place them under the grill until lightly toasted.

  3. In a blender or food processor, combine the thawed peas, minced garlic, olive oil, salt, and pepper. Blend until smooth.

  4. Spread the pea purée on the toasted baguette slices.

  5. Top each crostini with rocket leaves and cooked broad beans.

  6. Season with salt, pepper, and grated Parmesan cheese if desired.

  7. Serve immediately.
