How To Make Smoky Vegetarian Collard Greens

Ingredients
- 1 bunch of collard greens, stems removed and leaves chopped
- 2 tablespoons of olive oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of red pepper flakes
- 1 cup of vegetable broth
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat. Add the chopped onions and garlic and sauté until they are softened and fragrant.

Add the smoked paprika and red pepper flakes to the pot and stir well to coat the onions and garlic.

Add the chopped collard greens to the pot and stir them into the onion mixture. Cook for 2-3 minutes until the greens begin to wilt.

Pour in the vegetable broth and bring the mixture to a simmer. Reduce the heat to low, cover the pot, and let the collard greens cook for about 40 minutes or until they are tender.
