Ingredients

  • 1 bunch collard greens, washed and chopped
  • 4 slices bacon, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 tbsp yellow mustard
  • 1 tsp liquid smoke
  • Salt and pepper to taste

Instructions

  1. In a large pot or dutch oven, cook bacon over medium heat until crispy.

  2. Add onion and garlic and cook until softened, about 5 minutes.

  3. Add collard greens and enough water to cover the greens.

  4. Bring to a boil, then reduce heat to low.

  5. In a separate bowl, whisk together apple cider vinegar, brown sugar, ketchup, yellow mustard, and liquid smoke.

  6. Pour the barbecue sauce over the collard greens and stir to combine.

  7. Simmer for 1.5-2 hours, until the collard greens are soft and tender.

  8. Season with salt and pepper to taste.
