Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 cup parsnips, chopped
  • 1 cup carrots, chopped
  • 1 cup sweet potatoes, chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.

  2. Add the parsnips, carrots, and sweet potatoes and stir to combine.

  3. Pour in the vegetable broth, chickpeas, paprika, thyme, salt, and pepper. Bring the mixture to a boil.

  4. Reduce the heat to low and let the stew simmer for 30-40 minutes or until the vegetables are tender.

  5. Serve hot with fresh parsley on top.
