How To Make Root Vegetable and Lentil Curry Recipe
A hearty and nutritious vegetarian curry with a blend of root vegetables and lentils in a fragrant spiced sauce.
Serves:
Ingredients
- 1 tbsp of vegetable oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tbsp of fresh ginger, grated
- 1 tsp of ground coriander
- 1 tsp of ground cumin
- 1 tsp of ground turmeric
- 1/2 tsp of cayenne pepper
- 1 large sweet potato, peeled and diced
- 2 large carrots, peeled and diced
- 1 parsnip, peeled and diced
- 1 cup of red lentils, rinsed
- 4 cups of vegetable broth
- 1 can of diced tomatoes
- Salt and pepper to taste
- 1/4 cup of fresh cilantro, chopped
Instructions

Heat the oil in a large saucepan over medium heat

Add the onion, garlic, and ginger, and sauté until translucent.

Mix in the coriander, cumin, turmeric, and cayenne pepper, and cook for another minute.

Add the sweet potato, carrots, and parsnip, and stir to coat with the spices

Pour in the lentils, vegetable broth and canned tomatoes

Bring to a boil, then reduce the heat to low and simmer for 35-40 minutes, or until the lentils are cooked and the vegetables are tender

Season with salt and pepper, and garnish with cilantro before serving.
