  • 2 cups of mixed vegetables (carrots, broccoli, bell peppers, zucchini, etc.)
  • 2 tbsp of olive oil
  • 1 tsp of garlic powder
  • 1 tsp of dried herbs (such as thyme, rosemary, or oregano)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. Wash and chop the vegetables into bite-sized pieces.

  3. In a large bowl, toss the vegetables with olive oil, garlic powder, dried herbs, salt, and pepper until coated evenly.

  4. Spread the vegetables in a single layer on the prepared baking sheet.

  5. Roast in the preheated oven for 20-25 minutes or until the vegetables are tender and slightly caramelized, stirring halfway through.

  6. Serve hot as a side dish or a main course.
