How To Make Mahi Mahi with Roasted Vegetables Recipe

This dish features Mahi Mahi fish with a side of hearty roasted vegetables for a complete and healthy meal!

  • 4 Mahi Mahi fillets
  • 1 lb. of mixed vegetables (such as bell peppers, carrots, zucchini)
  • 2 tbsp. of olive oil
  • 1 tsp. of garlic powder
  • 1 tsp. of paprika
  • Salt and pepper to taste


  1. Preheat oven to 400°F.

  2. On a baking sheet, toss the mixed vegetables with olive oil, garlic powder, paprika, salt, and pepper.

  3. Bake vegetables for 15-20 minutes, or until tender and golden brown.

  4. Season mahi-mahi fillets with salt and pepper.

  5. Heat the remaining olive oil in a skillet over medium heat.

  6. Add the fillets and cook for about 3-4 minutes per side, until golden brown and cooked through.

  7. Serve the roasted vegetables on the side with the mahi-mahi fillets.
