How To Make Egg Foo Yung

Ingredients
- 6 eggs
- 1/4 cup diced onions
- 1/4 cup diced bell peppers
- 1/4 cup diced mushrooms
- 1/4 cup diced bean sprouts
- 1/4 cup diced cooked chicken or shrimp (optional)
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil for frying
Instructions

In a large bowl, whisk the eggs until well beaten. Add the onions, bell peppers, mushrooms, bean sprouts, and cooked chicken or shrimp, if desired. Mix well.

Heat the vegetable oil in a frying pan over medium heat. Pour about 1/4 cup of the egg mixture into the pan and spread it out evenly into a small pancake shape.

Cook for 2-3 minutes until the bottom is golden brown. Flip the egg foo yung and cook for another 2-3 minutes until cooked through.

Repeat with the remaining egg mixture, adding more oil if needed. Serve hot.
