Ingredients

  • 6 eggs
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers
  • 1/4 cup diced mushrooms
  • 1/4 cup diced bean sprouts
  • 1/4 cup diced cooked chicken or shrimp (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil for frying

Instructions

  1. In a large bowl, whisk the eggs until well beaten. Add the onions, bell peppers, mushrooms, bean sprouts, and cooked chicken or shrimp, if desired. Mix well.

  2. Heat the vegetable oil in a frying pan over medium heat. Pour about 1/4 cup of the egg mixture into the pan and spread it out evenly into a small pancake shape.

  3. Cook for 2-3 minutes until the bottom is golden brown. Flip the egg foo yung and cook for another 2-3 minutes until cooked through.

  4. Repeat with the remaining egg mixture, adding more oil if needed. Serve hot.
