  • 4 medium-sized potatoes, cubed
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).

  2. In a large baking dish, combine the potatoes, onions, olive oil, garlic powder, paprika, salt, and black pepper. Toss well to coat everything evenly.

  3. Spread the potato and onion mixture out in a single layer in the baking dish.

  4. Roast in the preheated oven for 30-40 minutes until the potatoes are golden brown and crispy. Stir once or twice during cooking to ensure even browning.

  5. Remove from the oven and garnish with fresh chopped parsley.

  6. Serve hot and enjoy!
