How To Make Sweet Potato, Spring Onion & Feta Salad

Ingredients
- 2 sweet potatoes, peeled and cubed
- 1 bunch of spring onions, thinly sliced
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, toss the sweet potatoes with olive oil, salt, and pepper.

Spread the sweet potatoes on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.

In a separate bowl, combine the roasted sweet potatoes, spring onions, feta cheese, and balsamic vinegar.

Season with salt and pepper to taste.
