Ingredients

  • 2 sweet potatoes, peeled and cubed
  • 1 bunch of spring onions, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the sweet potatoes with olive oil, salt, and pepper.

  3. Spread the sweet potatoes on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.

  4. In a separate bowl, combine the roasted sweet potatoes, spring onions, feta cheese, and balsamic vinegar.

  5. Season with salt and pepper to taste.

  6. Serve the salad chilled or at room temperature.
