Ingredients
- 1 lb parsnips, peeled and sliced into sticks
- 2 tbsp miso paste
- 2 tbsp maple syrup
- 1 tbsp olive oil
- 1 tsp soy sauce
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Sesame seeds, for garnish
- Green onions, sliced, for garnish
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, mix the miso paste, maple syrup, olive oil, soy sauce, garlic powder, salt, and pepper until well combined.

Place the parsnip sticks in a single layer on a baking sheet. Pour the miso glaze over the parsnips and toss until evenly coated.

Roast in the preheated oven for 20-25 minutes, or until the parsnips are tender and golden brown, flipping halfway through the cooking time.

Remove from the oven and garnish with sesame seeds and sliced green onions. Serve hot.
