Ingredients

  • 1 lb parsnips, peeled and sliced into sticks
  • 2 tbsp miso paste
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tsp soy sauce
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, mix the miso paste, maple syrup, olive oil, soy sauce, garlic powder, salt, and pepper until well combined.

  3. Place the parsnip sticks in a single layer on a baking sheet. Pour the miso glaze over the parsnips and toss until evenly coated.

  4. Roast in the preheated oven for 20-25 minutes, or until the parsnips are tender and golden brown, flipping halfway through the cooking time.

  5. Remove from the oven and garnish with sesame seeds and sliced green onions. Serve hot.
