How To Make Hasselback Parsnips with Orange & Maple Syrup

- 4 parsnips
- 2 tablespoons olive oil
- salt, to taste
- pepper, to taste
- 2 tablespoons maple syrup
- 1 tablespoon orange zest
- 2 tablespoons orange juice
- 1 tablespoon chopped fresh parsley (optional)
Instructions

Preheat the oven to 400°F (200°C).

Cut slits into the parsnips, about 80% of the way through, being careful not to slice all the way through.

Place the parsnips on a baking sheet and drizzle with olive oil. Season with salt and pepper.

Roast the parsnips in the preheated oven for 20 minutes.

While the parsnips are roasting, combine maple syrup, orange zest, and orange juice in a small bowl.

Remove the parsnips from the oven and brush them with the orange and maple syrup glaze.

Return the parsnips to the oven and roast for another 20 minutes, or until they are tender and caramelized.

Remove from the oven and sprinkle with chopped parsley (optional) before serving.
